I’m almost 40 and about 50 lbs. overweight now. I am embarking on a healthy journey to change the way I eat and think about food. Having visited the Optimum Health Institute twice I am familiar with the benefits of enzymes and eating a majority of raw organic food. I think my favorite is mung bean sprouts. I soak a handful before I go to bed, and they are already sprouting by morning. I’m not just eating raw food, but I am adding as much as I can to my diet.
My story – I initially lost about 30 pounds on weight watchers, and then hit a major plateau. The weight just stopped coming off. I’ve lost 10 pounds since I’ve been hanging out with you, and following your essential cuisine. I want to lose about 20 more pounds.
I have a question for you. What are your thoughts about cottage cheese? My colleague’s had a going away party, and they specifically got fresh fruit and cottage cheese for me. They knew I wouldn’t eat the fried rice, scrambled eggs, bacon, or pastries. I know the fruit is GREAT, but what about the cottage cheese?

Aloha Kim, How great that your co-workers cared about feeding you well at your party. Cottage Cheese is not my favorite unless it is Organic, but I think it would be fine and much better than bacon and pastries. But, it also depends on how you do with dairy. Nancy’s makes a delicious Organic Cultured Cottage Cheese. Eggs would have been another good choice. Sometimes when I am out or traveling and there is absolutely nothing to eat, and I know I need some protein and something that will sustain me, I will opt for Cottage Cheese myself. If I have some crackers it can be a very satisfying and a fueling meal or snack. It is easy and not messy. Make Every Bite Count, and keep up the great work. Chef Teton

I am eating healthier and have eliminated most fats, wheat and dairy from my diet to cleanse my liver and kidneys. I usually snack on raw sunflower seeds to get rid of the hunger in the evening. Is that OK?

Hi Charlie,
Sunflower seeds are surely better than pretzels, potato chips, or corn chips. If you are eating all living foods then you can eat away at your hearts content of almost anything raw. But, you are not they may not be the best choice. Your intent, if I am correct is to give the liver a rest and cleanse. This means much less “fat”, sugar and processed foods. So, be careful with the fat in the seeds. For the first two weeks cucumbers or other raw veggies would be better. If you have a few seeds, don’t worry about it. But, don’t overdo. After two weeks then you can put them back in. I do not teach the flush type diet, but I recommended it to you for a liver cleanse and something to follow. it’s a good diet for those who want to jump start weight loss and continue eating animal protein. Essential Cuisine is a Dietary Practice – eat from the Earth and not the Factory. It is not so rigid and the purpose is to create a new dietary lifestyle that will fit into “your” lifestyle. I advocate cultured foods, lots of raw, high mineralization, whole grains, legumes, healthy spices and good fats (raw). Keep up the great work. All the changes you are making will be beneficial and soon your night time hunger will wane. Chef
Weight loss is such a complex issue. I struggled with it for years, then went on a Raw Food Diet. The Raw Food Recipes were so good I thought I had died and gone to heaven. Years later I finally started putting cooked foods in my diet. I now have a Raw and Cooked Food Diet that really serves me, and I have found serves my clients too. If we could all just learn to by pass the factory foods and eat food from the Earth with minimal processing we would be so much better off. First of all, it is those factory foods with ingredients in them that are not really food, that cause havoc on the body and are also responsible for cravings. If you are embarking on a change in your diet, letting go of those artificial foods, know that your cravings will go away. it is just a matter of time. Pseudo foods (hydrogenated fats, high fructose corn syrup, preservatives and chemicals) are the culprits. They are so addictive to many people. Once you have cleansed them from your body, just like if you quit smoking or stopped caffeine, you will not crave them. You can still enjoy sweets and delicious foods. They should just be made from real ingredients that have grown from the Earth and have been processed for the benefit of your body, not for the amount of time they will last on a shelf. I guess what I am most interested in is your diet of cooked and raw foods.
I have raw food cook books and although I make some recipes a lot of it is too difficult to really incorperate in real life. Plus I just don’t want to eat raw all the time…
Your diet really interests me because you seem to have figured out a really good combination or regime. Would love to know more about it. Will your dvd’s tell me about your regime or is that specifically raw food? I know about raw food I just don’t know how to turn it into a practical diet that works for me every day!

Although I ate only Raw Food for 2 years, I found that it was not the best for me as a dietary regime.
After studying with several health professionals I learned to incorporate the best of cooked foods and
cultured foods. This is why I created Essential Cuisine. The Raw Food Basics and Entrees DVD’s show you the
basics of making Raw Food. Once you understand the integrity of Raw Food, then you know what is most
important to utilize in cooked food. The a la Oils DVD’s show you how to use good fats (raw), nuts and seeds

I already love your DVD’s and I’m only on #4 right now!! I have been a vegetarian for several years, but recently (last September) made a decision to go total vegan. I eat only foods “as grown”. I am careful to buy organic as much as possible and stay completely away from GMO foods. Your videos have given me some raw food recipes that I plan to incorporate into my meals. You make them look so easy and delicious. I tried to “go raw” completely and it just doesn’t work for me, although I do eat probably 60% raw. I have lost 15 pounds effortlessly since September and am very close to reaching my goal/ideal weight for the first time in…I can’t remember how many years. I find I am actually eating more food while continuing to lose weight. My husband tells me everyday how good I look and just recently a friend told me I was getting back my girlish figure…what an encouragement!
