I was considering watching all the DVDs again and making sure I have a notebook with me.

I also have since found out that many people dry out the "leftover" almond pulp and use it for almond meal. I am wondering if there are any nutrients left in it though... I wonder if it just fibre and void of any goodness.

I'm interested in the printed recipes, too. There was a recipe using grated beets and apples, but I don't know which DVD it was on and I would love the recipe...other than going back thru all the DVD's and finding it, it would be nice to have a printed copy. I guess, otherwise, I'll just have to watch them again (no real problem) and have a pad of paper next to me.

And, regarding the almond milk...I made some & it was delicious...I hung up the bag with the stuff left inside and the next day I sprinkled it on some steamed veggies. I hope I wasn't eating something that I was suppose to throw away

Looking forward to your reply, Susan.

Hi Susan,

I am making my way through your wonderful dvds. It is so great to be able to watch them repeatedly to really let the concepts sink in. It all looks like so much fun too!

I have been feeding my family mostly organically for the past 10 years, since my now 13 year old had severe allergies, mostly to processed corn. I have joined an organic food co-op and I am excitedly awaiting the arrival of my Vitamix!

I have a question - I bought 2 lbs of organic tamari almonds at the co-op before I realised they still have their brown coating on them (unblanched). They are so yummy (my new healthy addiction), but I can't get the enzyme inhibitors out of my head! Is it still ok to eat them (just harder to digest) or should I forego them?

Thanks! Keep up the great work, it's people like you who are leading the way in healthy eating and helping to put an end to the crazy way this country eats with all of it's bad consequences and health issues.

Happy healthy eating.....one bite at a time!
Patricia

Hi, Susan. Just got your DVDs. I have watched the first two and I love them so far! Anyhow, I have a BIG BAG of almonds. They have not been blanched. I want to make almond milk and almond cheese. Does the almonds have to be blanched to make milk? And after making the milk, is the stuff left in the bag almond cheese? Or is it simply "leftover waste". It seems a shame to just throw it away...

Also, I am wondering if there is somewhere I can get your recipes that are on the dvds, in printed form. You know, so I don't have to keep starting up the dvd player to get a recipe. (I know, I should be more experimental, but all this RAW goodness seems to cost a fortune, I don't want to waste any of it. lol)

Oh. Also, I saw the post about milk. Purchasing RAW milk is one of the BEST decisions I have ever made. I am not vegan or vegetarian, but I am very careful about the kind of meat/dairy I put into my body. It is always organic, pasture fed, or wild... like seafood.

Hi Eileen,

Thank you for writing, and thank you for thinking I am a normal person! The Cultured Veggie DVD has thorough directions for making cultured vegetables and kefir, and the kefir is made with milk. That said, I highly recommend you get it and incorporate cultured veggies in your diet, even if you don't do the kefir.

I do not do well with dairy either unless it is raw. I do fine with kefir because the culturing process changes the food by enlivening it, so it is easy to digest. I don't eat a lot of it (I make it from Goat milk when I am craving it) because I eat cultured veggies daily instead. This food is one that most people leave out of their diet and it could be said it is one of the most important to include. Please read the article about cultured veggies on my website. Most Sauerkrauts are pastuerized and full of salt. You can purchase them "raw" from Rejuvenitive Foods, but they are pricy. Making your own is easy and you can make them taste the way you want. One batch will last for weeks because you can make a lot at once. You can purchase the culture by going to Wilderness Family Naturals through my web-site. Every one I turn on to cultured veggies say they notice a difference in their digestion immediately. Cultured veggies are a Powerful Food – one of the greatest ways to implant healthy probiotic flora into your intestine and thus enhance your immune system.

If you are in ever into making coconut kefir (from the juice of young baby coconuts), the instructions are really the same as the milk kefir. The only difference is that you have to cut open the coconuts and obtain your own juice.

If you are still going to be eating cooked foods - lightly steamed veggies, alkaline grains and squashes you will get a lot from the a la Oils DVDs, including cooking with coconut oil. The ala Oils DVD set contains a mixture of raw and cooked. I found that most people do not have a dietary practice of only Raw foods - myself included. I like to mix the concepts - taking the most essential from Raw Food Cuisine and marrying it to some of the foods that are better when cooked. It is all very personal.

Thanks so much Eileen. Please feel free to call or write should you have any more questions.

Making every bite count,

Susan,

I accidently found your site. I have been looking for raw food dvd's done by a normal person. I have a question about your cultured food dvd. When doing the kefir is it done with milk? Reason I am asking I have lactose intolerant. Trying to decided to or not to purchase all the dvds. I have taken classes but I need a visual at home.

Thanks, Eileen
