Enzyme inhibitors

Hi Susan,

I am making my way through your wonderful dvds. It is so great to be able to watch them repeatedly to really let the concepts sink in. It all looks like so much fun too!

I have been feeding my family mostly organically for the past 10 years, since my now 13 year old had severe allergies, mostly to processed corn. I have joined an organic food co-op and I am excitedly awaiting the arrival of my Vitamix!

I have a question – I bought 2 lbs of organic tamari almonds at the co-op before I realised they still have their brown coating on them (unblanched). They are so yummy (my new healthy addiction), but I can’t get the enzyme inhibitors out of my head! Is it still ok to eat them (just harder to digest) or should I forego them?

Thanks! Keep up the great work, it’s people like you who are leading the way in healthy eating and helping to put an end to the crazy way this country eats with all of it’s bad consequences and health issues.
