Do you know what the differences in these two different pictures?

The top one is one of my favorite go to fast meals. It is simply raw tofu on a piece of toast topped with olive oil, rosemary and basil. While the bread is toasting I quickly infuse the olive oil with the herbs, and then pour it on the toast and tofu. To enliven it with digestive power and delicious flavor, I top it with some fermented cultured super foods.

This particular batch of cultured superfoods was made with carrots and garlic - that’s all! It was fermented it for two weeks.

If you think that cultured vegetables are not that big of a deal, I encourage you to use this powerful super food to complement every meal you have. Traditional, and now the new sauerkrauts coming on the market are very good, but learning to make your own combinations is where the delicious flavor comes in, not to mention the bio diversity of microbes that you can make in one single batch.

This carrot mixture made a huge difference in the taste and digestibility of this simple healthy lunch.
